As the weather warms up, it's time to start thinking about light and refreshing meals that are perfect for the spring season. One great option is a spring spinach salad. This dish is not only delicious and satisfying, but also packed with nutrients that are essential for a healthy diet. Here's a fresh Spring spinach salad recipe that's both tasty and nutritious:

Ingredients

For the salad:

1 cup sugar snap peas, sliced on the bias

1 1/2 cups asparagus, sliced on the bias, ends trimmed off

1 cup radishes, sliced

1 cup cucumber, sliced

4 cups baby spinach

1 cup Garlic Parm'Nana Chips

Lemon slices for garnish

Freshly ground pepper (optional)

For the dressing:

2 lemons, juiced

2 garlic cloves, minced

3 tablespoons Extra virgin olive oil

1/2 teaspoon ground black pepper

1/2 teaspoon fresh dill (optional)

 

Instructions

For the Dressing: 

  1. Combine all ingredients in a jar or small mixing bowl. Add more pepper or dill if desired. 
  2. Whisk until well mixed.
  3. Store in airtight container for up to one week. 

For the Salad: 

  1. Prep the vegetables by washing, slicing, and set aside.
  2. In a large bowl, start constructing the salad by layering your spinach on the bottom. Then, add sugar snap peas, asparagus, radishes and cucumbers.
  3. If you plan to eat immediately, top with B. Fine's Garlic Parm'Nana Chips and lemon wedge. Otherwise, store in an airtight container for up to two days and top with 'Nana Chips and lemon wedge when serving.
