1 cup roasted Japanese sweet potato, skins removed
2/3 cup almond milk
1/3 cup oats (Recommended One Degree Organics)
1 tsp baking space
2 flax eggs (2 Tbsp flaxseed meal + 5 Tbsp water)
2 Tbsp Clevr Blends Golden Super Latte
Roast sweet potatoes at 425°F for 25-30 minutes, flipping halfway
Let the sweet potatoes cool (I had mine roasted already and they had been in fridge).
Make flax egg and set aside to thicken.
In a food processor, add everything together.
Heat a pan over medium heat and melt coconut oil.
Make your pancakes! This makes 3-4 good sized pancakes!
Top with almond butter, apple sauce and Bubba's Foods Cinn-ful Apple Ungranola. Taste like apple pie!
